Roasted chicken is great, but come watch Bob give a demonstration of the spatchcock technique, including preparing the chicken, how to set up your Big Green Egg (direct vs. indirect), cooking times and temperatures, along with a discussion of great rubs and smoking chips to use for this method. We’ll also cover the value and use of a probe thermometer. Finally, all will get a taste of this amazingly juicy and delicious chicken, killer cheese biscuits, and lightly charred green beans.
