1 box Macaroni
6 Tbsp Butter
⅓ C Flour
3 C Whole Milk
1 C Heavy Whipping Cream
4 C Shredded Chedar
2 C Shredded Gruyere
1 ½ C Breadcrumbs
4 Tbsp Melted Butter
½ C Parmasean Cheese
¼ tsp Smoked Paprika
Salt and Pepper

Preheat oven to 350.

Cook macaroni according to package directions until just under a-la-dente. Drain, allow to cool, and toss in a drizzle of olive oil.

Make a roux by melting butter over low heat, then slowly whisking in flour, then milk and heavy cream, and finally shredded cheese. Combine macaroni and sauce, mixing well. Pour into a cast iron pan or baking dish.

Prepare topping by combining breadcrumbs, parmesan, paprika, salt, pepper, and melted butter. Add topping to pasta mixture and bake until crispy and golden brown (around 12-15 minutes).
