Are you looking to spice up your next cookout with family and friends? Try out this blazing buffalo chicken meatball recipe, using the Caribeque Calypso Kick Rub next time you fire up your Big Green Egg!



  • oil spray
  • 1 1/4 lb ground chicken
  • 1/4 cup panko crumbs
  • 1 large egg
  • 2 scallions, chopped
  • 3 tbs of Calypso Kick Rub
  • 1 clove crushed garlic
  • 1/3 cup Franks Hot sauce
  • 1/4 cup blue cheese crumbles OR Blue cheese dressing

In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot and garlic; season with 3 tbs of Calypso Kick Rub.

Using clean hands, mix until combined. Roll the mixture (1/8 cup each) into 26 round meatballs.grilled_meatballs_large

Light your Big Green Egg and set up for indirect heat (legs up)

Get your egg up to a steady 350 degrees

Place meatballs on the egg and cook for no more than 20-23 minutes.

(If using an oven the same temperature and time will work)

Place the meatballs in a bowl or brush your buffalo sauce on the meatballs . Serve immediately, top  with crumbles or dressing and serve!
