Grilled Corn and Black Bean Salsa
3 Ears Grilled Corn, cut of the cob
2-15 oz. Cans of Black Beans, rinsed and drained
2-3 Large Tomatoes, seeded and chopped
1 Large Avocado, diced
1 Purple Onion, chopped
1/4 c. Fresh Cilantro, minced
2 T. Olive Oil
1 T. Red Wine Vinegar
1 t. Sea Salt
1/2 t. Pepper
Hot Sauce to taste
Mix all ingredients together and chill. Serve with tortilla chips or as an accompaniment to grilled chicken or seafood.
