INGREDIENTS
3-4 medium apples, cored and thinly sliced (about 2 cups)
¾ C Sugar (divided)
2 teaspoons flour (For gluten free use King Arthur 1 to 1 flour)
1 teaspoon lemon juice
1 tsp ground cinnamon (divided)
2 eggs lightly beaten
1 1/2 cup Cooked pumpkin
1 cup condensed milk (Condensed coconut milk for dairy free)
2 Tablespoons melted butter (For dairy free use Nutiva butter flavored coconut oil)
1/8 teaspoon nutmeg
1/4 teaspoon salt
1 pie shell (homemade or storebought)
APPLE LAYER: Toss apples with 1/4C sugar, flour, lemon juice and 1/4tsp cinnamon in a bowl; place in pie shell
PUMPKIN LAYER: Combine Eggs, pumpkin, evaporated milk, 1/2C sugar, butter, 3/4tsp cinnamon, nutmeg, and salt in a bowl; Pour over apples. Bake at 375 for 30 minutes. Remove and add:
CRUMBLE TOPPING MIX – 1/2 cup flour 5 Tablespoons sugar 3 tablespoons softened butter (For dairy free use Nutiva butter flavored coconut oil) Optional: 1/3 cup chopped walnuts or pecans Return to oven and bake for 20 minutes or until custard is set.
