INGREDIENTS:
1-1/2C Whole Milk
1 packet rapid rise yeast
¼ C vegetable oil
2Tbsp unsalted Butter
1/4C Sugar
1 lb. 7oz Bread Flour
2 eggs (seperated)
1-1/4tsp Salt
Optional Toppings: Sesame Seeds, Poppy Seeds or Everything Bagel Seasoning

DIRECTIONS: Heat milk in a saucepan until it reaches 95-100 degrees. Add the following incrementally, whisking after each addition. Allow to sit for 5 minutes to activate the yeast. In your mixer fitted with the dough hook combine: yeast mixture, bread flour, 1 egg and salt. Mix 5 minutes on speed 1, then an additional 5 minutes on speed 2. Remove from mixer, form into a ball and transfer to an oiled bowl. Cover and allow to rise until doubled in size.

Prepare egg wash by whisking 1 room temperature egg with a few drops of water, a pinch each of sugar and salt.

Portion the dough into 2.25oz pieces Shape each piece into 8” logs. Extend the logs to 12” and tie into a knot.

Line a baking sheet with parchment paper and spray with nonstick cooking spray. Arrange rolls and cover with oiled plastic wrap, allowing rolls to rise until almost doubled in size. Brush the top and sides of rolls with the prepared egg wash. Season liberally with topping of choice and bake at 350 for 20-25 minutes. Enjoy by themselves, slathered in butter in jam, or as a sandwich bun!
