
Planked Potato Casserole
Ingredients:
10 cups, frozen shredded potatoes
1/2 c. butter, melted
8-oz. cheddar cheese, shredded
1 cup cooked and chopped bacon
2 caramelized onions, chopped
2 tbsp. chives
2 c. sour cream
salt & pepper to taste
Directions:
1. Mix together butter, cheese, chives, sour cream, caramelized onions salt & pepper. Stir in potatoes, then add the bacon.
2. Set up Grill for direct cooking at 400 degrees.
3. Soak Planks for at least 30 minutes, then add ½ cup scoops of potato mixture to plank.
4. Grill until warmed through, about 12-15 minutes.
